Ricota’s, with one “t” for some reason, is a bodega. Say it with me now, bo-de-ga, yes very good. Nothing wrong with that! First time I’ve gotten slices in a convenience store atmosphere. You could definitely tell the place is known for the pies. Lots of guys housing slices by their cars outside and waiting in line to get their fix. Very strange area of Buffalo that I’ve never really explored. The whole scene was bizarre and enticing. Hair standing erect (woah) on the back of my neck. Just get to the facking photos, Shakespeare! Understood

These bad boys were 2/$4.50. At first glance, considering ingredient cost on these monsters alone…lets just say I can see why they’re cranking them out of a hole in the wall. Tons of cheese and a lot of pepperoni on a saucy, saucy slice. These were heavy, maaaaaaan.

Daddy like (don’t make it weird). This is stellar sauce. Dynamite shit. Rich, spicy, and ladled on like the chef was epileptic. When you’re up near the crust and you’re still riding the drippy robust velvety sauce train…let’s just say I don’t know why the kids need drugs. This is drugs.

Gooey and laid thick. We could have gone a tad browner for my taste, but that is a shitty little qualm on what was stringy, salty, smooth cheese. So. Much. Cheese. Dope on a rope.

They polka-dotted these bastards, but it’s still the classic margherita. Good stuff. They’re leaking some grease, but these slices are about going over the top, so it only enhances the heart attack I feel creeping up. From all the emotion, no doubt.

Ok, so the dough is my only real gripe here. There was almost no texture to it. It is pillowy and squishy with no pull resistance or crustiness. It’s that “white bread” dough, that I don’t much care for, but even fluffier than usual. I know a lot of you sickos out there are in to that, so this might put these over the top for you. Still, not flawed in any way.

Crust was incredible! Admittedly, on the dough I tend to like the crust can dry out and become hard tack pretty easily. This crust was still squishy, but crisp on the outside and chewy. It also happens to be covered in bubbly cheese. This is some highlight reel shit, kid. Lets run the machine.

Ricota’s impressed the hell out of me! This is what I started out doing this for. Never even heard of the place until someone suggested it on a previous post. An absolute diamond in the ruff, and if you like squishy dough, buckle up, bud. Absolutely a must try for anyone hunting for a potential new favorite.
