Broadway Bobby’s is on Ridge Rd near the intersection of Ridge & South Park. I’ve always noticed it driving to Rt 5 (huge banner out front), but never went in. Today was the day. Outdated, but fully functional and spacious interior. Bobby’s offers an outstanding variety of options, and from what I could gather, may be more known for their subs. They were almost incomprehensibly affordable ($5.40 for a Lg Assorted, I think?) and looked delicious. After much debate, I decided to go for 2 slices of cheese and pepperoni, myself. Lunch rush was busy, and they advised I wait for a fresh pie to come out, which I did. 2 + can-o-pop/$5. Church.
The man was not kidding. These slices came fresh up out the oven with their Mark Jacobs goggles. I thought about going after them with a fork and knife, but then I relocated my balls and just ate it normally. Now I have a mouth-spanning cheese blister, so that played out well. This pizza is pretty, but I can already see the cheese slipping and jesus is it ever thick. Thickest slice I’ve gotten to-date.
The pepperoni was a lot like Bella. Very thin and crispy. Packs nice flavor, but there could have been a lot more of it. It works better than cup and char here, because this pie was already chewy AF. The cheese was hot, clearly. It was almost bothersome how well it pulled because I had to fish cheese thread out of me beard for about an hour afterward.
Despite its gooey and delicious appearance, the cheese wasn’t great. It really did give off a lot of grease and didn’t have a great chew. Very possibly due to the fact that it hadn’t cooled off yet and had time to solidify together again. It also kind of slid all over the dough. At first glance I thought cheese would be a highlight, but it just wasn’t working.
Bobby’s highlight is their sauce. It is tangy and zesty and tastes “clean” if that makes sense. It’s a quick burst of flavor, but doesn’t linger and dominate your palate. Also, very nice ladle on the pizza. I like’a a lotta da sauce. That’ll be enough of that.
Bobby’s biggest downfall is their fluffy dough. This was a super thick slice and it was very chewy. Not dense. It bit through easily, but it all condensed down into a doughball in my mouth. If you look at the shot, you can see the half-cooked doughy texture I’m talking about. I mentioned last time, this texture in dough is fine, but I prefer it be the top 1/3rd of 1/4th of the dough. This penetrates all the way to the crust.
The underside has some nice color and corresponding flavor that helped cut through the dough’s texture, but it wasn’t enough to salvage it. Let’s move on to the ticker-tape.

Overall Bobby’s was just ok. The cheese wasn’t great for how fresh it was, the dough was way over my thickness limit, and 3 is a criminally low count on pepperoni pieces. We’re still talking about pizza, so I enjoyed it, but it in no way enticed me to come back for another slice with all the options in the area. The way those subs were flying out the door, however, will certainly bring me back around. That might just be their strong suit. Thank you, Broadway Bobby’s! See you next week.
